Country Bird Bakery is Tulsa's most celebrated artisan sourdough bakery, founded in 2022 by Cat Cox, who first started selling bread from the back of her truck in a parking lot during Thanksgiving 2019. In 2024 the New York Times named Country Bird one of the 22 best bakeries in the entire United States, and in June 2025 Cat Cox was awarded the prestigious James Beard Award for Outstanding Pastry Chef or Baker — the highest culinary honor in America. Using stone-ground, locally sourced regenerative flour from Oklahoma, Arkansas, Kansas, Missouri and Texas, every loaf and pastry tells the story of the land and the farmers who grew it. From classic sourdough and croissants to creative seasonal pastries, expect a line and arrive early.
